The meatless night! Oh this is something that I really should do, but it totally scares me. I love my meat! I don't eat enough veggies. MUST CHANGE!

I'm so with you! Losing weight is *not* impossible on a low budget, it just takes a bit more creativity.

Just remember to eat the best quality food you can afford, too - this should be about eating healthy, not just getting slim!

For example, when you reach for the milk - go for the 1% or skim. Buy organic if you can (the hormones in US milk can cause pre-diabetes type conditions, which can lead to further weight gain...)

If the omega-3 eggs are on sale, they're usually just a few pennies more than the regular eggs. Grab a dozen of those to boost your Omega fatty acid intake.

Buy "canned" tomatoes in jars or tetra packs, if you can (pasta sauces are often jarred, and cheap!) The BPA used to line tomato cans leeches into the food, and can be harmful to your reproductive health & overall well being.

And try to limit canned fish to once per week, if you can - high mercury levels mean losing weight is pointless if you grow a big tumor instead!

Sweet potatoes are an excellent health food. White potatoes are as well, even though they often get a bad rep for being carb-laden food. They contain potassium and all kinds of nutrients, and are great steamed or baked - which saves fat and calories on frying.

Beans, oh how I love beans! Inexpensive whether dried or canned, and don't forget about fresh or frozen green and yellow beans! They add fantastic crunch to a salad, are great just dipped into a low-cal ranch dressing, or make a fantastic side dish steamed with a little bit of olive oil, salt & pepper.

Don't forget the most important element, though. If you're eating healthier, and eating to lose weight, you'll be eating smaller portion sizes too. Which will save you on your grocery bill anyway!

Just think - instead of buying two boxes of mac n cheese for you and hubby for dinner, you can pick up two inexpensive pork chops and use a couple of frozen veggies and a potato each. The cost, if you buy the pork on sale, is pretty close to the macaroni - but you're eating healthy!

It isn't hard, it just takes a desire to change!

I completely agree with you on this post. It is so simple for us to just neglect ourselves because of the excuses we make when we don't need a gym or expensive, "all natural" food to be healthy. And the coupons are head on - I love coupons!
