Love, Love, Lovin’ Veggies!!!

I’ve never been a huge fan of vegetables. Oh, I’ll eat them as a side dish with dinner, or enjoy an occasional salad, and I’ll even have raw veggies with some dip at a party or other social function. But, I’ve never craved vegetables, nor have chosen them as a main course for dinner. I am a meat and potatoes girl!!! That is until recently, however. For some reason lately I have been craving vegetables and try to incorporate them into as many meals as possible…except breakfast of course…I usually go for fruit…which is new for me too. I usually prefer breads, cereal, eggs, tortillas, etc. Oh, believe me, I still have tortillas with just about any meal I can work it into. I absolutely LOVE Mexican and LOVE tortillas warmed on the open burner on a gas stove…mmmm.

Anyway, back to my new recent love for veggies. As I said, I’ve actually been craving them, raw, roasted, cooked, in salad, whatever. I actually ordered a veggie fajita the other day at my favorite Mexican restaurant…NEVER have I done that before! I always, always, always, get the 4 meat fajitas they serve there. What is wrong with me? LOL.

I think the reason I’m loving veggies so much is because I love that they are zero or 1 point on Weight Watchers, or no calories on Jillian Michaels. I’m also learning to appreciate their flavors and colors much more, plus the added crunchiness and juiciness many of them have to offer. They are just soooo good!!!

The other night my oldest daughter, her sister in law and my good friend, Tishia Lee all got together for game night and made this delicious grilled chicken salad for dinner! It was delightful. Here’s a shot of the heaping amount of salad on my plate. I had two small chicken tenders, some cheese and Italian dressing, so the whole thing was about 6 points. I also had a piece of garlic bread for 2 points. And for dessert we made yellow cake mix, mixed with Diet 7up, and raspberries on the bottom. Topped it with ff Cool Whip for a total of 2 points!!! It’s the best dessert ever!

Here’s a shot of the salad. Doesn’t it look super yummy?! It was!!! And how colorful right?! It was so crunchy and delicious!

If you’ve never been a huge fan of veggies, hopefully you will start to feel the love for them too.

With Spring officially here in the US prices should start dropping on some of your favorite veggies. Why not pick some up today and begin enjoying some of nature’s goodness?

You might find a whole new love for veggies like I did. :)

    Oh yes, we are doing that here too. Actually, finding new healthy foods we love has been the best part of this journey thus far. Isn’t it great to know you can eat healthy AND like it? ahahah

    That salad looks great. I’m lucky in that I really do love vegetables. I just wish they didn’t go bad so quickly.

    Michelle, Yes! Eating healthy DOES taste sooo good! I think a lot of us have it ingrained in our brains that eating healthy has to taste bad, but in reality there are so many naturally good foods available that ARE healthy…we just have to retrain our brains…and tastebuds :)

    Josie, I’m with you on that one! I wish they didn’t go bad so quickly too. But, I’m not about to add any more preservatives than what’s already on them. I guess we just have to get used to shopping more often for fruits and veggies.

    I know what you mean. Vegetables have always been my favorite food. I used to go through bags of raw carrots every week (and still do) And my son has picked up on it as well. He is 10 and eats a lot of raw veges. His idea of dessert after dinner is a raw carrot! People around us do get annoyed by the constant crunching sounds though!

    Great to hear that you are enjoying veges. I have always been into eating raw veges (especially carrots). I got my son into them at an early age too and now he regards a raw carrot as a treat!
